Dark Chocolate Custard Pie With A Chocolate Chip Cookie Crust (Dairy Free, Refined Sugar Free & Paleo)

I’ve been on a Christmas movie watching, cozy robe wearing, what-new-thing-can-I-bake today kick and I’m not mad at it.

Ever since I made a replica of Rachel’s Thanksgiving Trifle for Thanksgiving this year, I’ve been thinking about how to make a paleo custard that is satisfying but not full of refined sugar.

I loved the idea of a chocolate chip cookie pie crust and a dark chocolate custard filling for the ultimate treat! So I figured, why not try it? At the very least,  it had to be better than putting meat in a trifle right?!

Chocolate Caramel Slice (Gluten/Grain, Dairy + Refined Sugar free!)

These Caramel Slices look like they are full of refined sugar and other not so ideal ingredients but surprise! They are completely grain, dairy and refined sugar free… and totally addicting.

Though I got married just over a year ago (ah!) we waited to go on our honeymoon until March when I had a long break from work and it was summer in Australia!

I had been to Australia in 2010 when I was working for Oprah and loved every second- even the work related we-almost-took out-Hugh-Jackman’s-eye stressful ones (sorry about that, Hugh). I instantly knew I wanted to go back ASAP.

But how can something that has nothing be so delicious, you ask?

I’m not sure but I think the answer lies in bananas & chocolate.

All I can say is – This bread is bananas. B-A-N-A-N-A-S!

Last week all of my college friends came in to town to celebrate and shower one of our friends who just had the most precious baby girl!
