Almond Butter Acai Cauliflower Smoothie (Paleo, Dairy Free, Whole 30)

After 5 days in Kauai, it feels so good to be back home and back in my kitchen!

Don’t get me wrong, I loved every waking and sleeping second of Kauai – it’s such a beautiful place with the nicest people, stunning scenery, picture perfect weather and amazing fresh food. I will put together a whole post on our favorite food spots from our trip soon!

But after 5 days of a LOT of treats (all worth every single bite!) and eating every meal out, it’s nice to be back whipping up my own food.

I took my all time favorite barre class this morning and it’s been super humid and hot here in LA so cooking was not going to happen.  Also, we are VERY low on groceries so I just wanted to use up what we have in the freezer/pantry.

Enter: This dreamy Almond Butter Acai Cauliflower Smoothie.

Banana Chocolate Breakfast Mookies (Grain, Gluten, Dairy + Refined Sugar Free)

Let me start this off by saying this Mookie is not what I had set out for this recipe to be.

And the first batch came out GREEN… and not because I intended it that way.

Okay, I think we should backtrack for a second here.

Originally, I wanted to make muffin tops because aside from the ones your jeans give you when you’ve eaten a bit too much, muffin tops are downright delicious and the best part of any muffin. I think we can all agree that you eat a muffin for the top. Crispy edges, fluffy center, contains the most topping, it’s the best.

Which, naturally, is why I tried to make them.

Only the first go round, I used sunflower seed butter. Sounds like it would be delicious, right? Right! Except that when sunflower seeds mix with baking soda it releases chlorophyll and your baked goods turn an exceptionally bright

PB&J Overnight Oats (Gluten, Dairy + Refined Sugar Free)

One of my biggest regrets in life might just be that I never truly appreciated Peanut Butter & Jelly as a kid. When my mom would pack it in my lunch it was always met with an “Ugh not PB&J!!!”

What was I thinking?!
Peanut Butter & Jelly is like chocolate and coffee. Or like chocolate & pb. Or like me being serenaded by Backstreet Boys. All WINNING combinations.

Now that I’m a total grown up I’ll take that PB&J combo wherever I can get it, thankyouverymuch. In a smoothie, a classic sandwich and now, these overnight oats.

I’m way way way behind on the overnight oats train, I know. The truth is, I’ve thought about making them for years but oats are generally something we just don’t keep on hand and so overnight oats haven’t been made!

But recently, my husband tried a store-bought version of overnight oats at work and he raved about

Coffee Chocolate Chunk Ice Cream (Dairy + Refined Sugar Free!)

There are few treats that I like more than Coffee Chocolate Chip Ice Cream.

Actually now that I’m really thinking about it,  there is no treat I like more than Coffee Chocolate Chip Ice Cream.

My mom said she ate a LOT of Haagen Dazs Java Chip ice cream when she was pregnant with me and I’m pretty sure that’s why I’ve had a life long affinity for chocolate and coffee (I remember being in like 4th grade at dance class and helping myself to the coffee pot that was left out for the dance moms… so there’s that.)

And of course, a lifelong love for coffee chocolate chip ice cream.

Dark Chocolate Covered Mixed Berry Pops! (Dairy + Refined Sugar Free!)

I’ve hit a turning point.

I’ve never been much of a frozen fruit dessert person. Even when I was a kid with strep throat, the idea of a popsicle never really thrilled me. When it comes to frozen treats, I’ve always been an ice cream kind of girl. Be it in a pint, on a cone or even on a stick, I prefer the creamy to the frozen fruity.

Until now!

I was recently on vacation with my husbands family in Huntington Beach, California and stumbled upon PopBar at the mall up the street from our hotel. Just writing the name of the place makes me sad that there isn’t one near me in LA.

It’s this GEM of a place where they have tons of popsicle options, yogurt based, gelato based  and fruit based. You then pick what kind of chocolate you want it in (milk, white, dark, mint etc) and what toppings (mostly chopped nuts, sprinkles, or crumbled

I just came back from running errands around my neighborhood and even though I’ve lived here for just over 5 years now, I have yet to fully grasp that people drive EVERYWHERE (like they will get in their car to drive a block only to spend 15 minutes trying to find parking) I still have that Chicago mentality so I spent the last couple of hours bopping around West Hollywood and I think I finally understand why people drive such short distances.

If you could see my frizzy hair and incredibly sweaty self at this very moment, you’d get it, too.

So I needed something to cool me down and fill me up. Iced coffee in the afternoon on a hot day (so like, every day here for the past 5 years)  is always my go to but today I needed something a little more. I love

Grain Free Pita Bread! (Paleo + Gluten Free)

This Pita Bread takes 10 minutes to make from start to finish and is gluten, grain + dairy free!

When I was in High School, I worked at a Greek diner.

Or maybe I should say I worked at the Greek Diner.

If you grew up around Metro Detroit, Leo’s Coney Island was the place to eat. You grew up going with your family and then in middle school when you were first itching to hang out in public places without your parents, they would drop you off there (and then you would call them from the pay phone to come pick you up) and then in high school you would hang out there after school and start just about every weekend night eating there. Basically it was the food that fueled your youth.

And at some point, I was probably your waitress.

Chocolate Cinnamon Chia Pudding Parfait! (Dairy + Refined Sugar Free)

This chia parfait tastes like dessert but is a super filling and healthy breakfast or snack! It’s completely dairy, gluten, and refined sugar free, vegan and paleo friendly and the best part? It only takes 5 minutes to make!

 Ch-Ch-Ch-Chia! Since chia seeds burst on to the health food scene a few years ago, I still can’t help but sing the jingle from commercial for the Chia Pet from the 90s EVERY time I say the word chia. Is that just me? And pretty much on constant loop in my brain because I use chia seeds all the time! (The Pottery That Grows!)

Aside from growing pet plants, Chia seeds are full of fiber and they are an excellent source of omega-3 fatty acids, they are rich in antioxidants as well as calcium and iron too!

I use them in smoothies or sprinkle them on top of acai bowls but my favorite way to make them

Roasted Tumeric Carrot Fries!

I’ve expressed this before but I can’t say it enough:

To me, food is as a vehicle to consume condiments. And one of my favorite ways to do that?

The Fry.

I love me a fry. Thick cut steak fries, hand cut, wedges, waffle, curly, sweet potato- I’ve rarely met a fry I don’t like. But for me, traditional fries live in the “20” category of the whole 80/20 thing.

But! I still have the urge to dip dip dip. So carrot fries have been my new go to as of late.

Chocolate Caramel Slice (Gluten/Grain, Dairy + Refined Sugar free!)

These Caramel Slices look like they are full of refined sugar and other not so ideal ingredients but surprise! They are completely grain, dairy and refined sugar free… and totally addicting.

Though I got married just over a year ago (ah!) we waited to go on our honeymoon until March when I had a long break from work and it was summer in Australia!

I had been to Australia in 2010 when I was working for Oprah and loved every second- even the work related we-almost-took out-Hugh-Jackman’s-eye stressful ones (sorry about that, Hugh). I instantly knew I wanted to go back ASAP.
