These Caramel Slices look like they are full of refined sugar and other not so ideal ingredients but surprise! They are completely grain, dairy and refined sugar free… and totally addicting.
Though I got married just over a year ago (ah!) we waited to go on our honeymoon until March when I had a long break from work and it was summer in Australia!
I had been to Australia in 2010 when I was working for Oprah and loved every second- even the work related we-almost-took out-Hugh-Jackman’s-eye stressful ones (sorry about that, Hugh). I instantly knew I wanted to go back ASAP.
7 years later (ha!) we made it back for 16 days of pure amazingness. And what I didn’t realize back in 2010 (and maybe that’s because I spent a good part of those days in a hotel conference room), was that Australia KNOWS WHAT’S UP when it comes to incredibly healthy, fresh and delicious food that is totally crap free.
Every meal we ate was better than the last and just when I thought all of LA and I took our coffee seriously— it turns out Australia is a force to be reckoned with in that department too.
I’ll put together a whole post of my favorite Australia travel eats, sees, dos, drinks etc. but today, I’m focusing on one little gem that I met in Australia and it was love at first sight:
The Caramel Slice.
I didn’t even know what a Caramel slice WAS but I noticed that every cafe and coffee shop had them (and there multiple coffee shops on every block) and they looked GOOD. I quickly noticed that all of the healthy spots had healthified versions of them and so, naturally, I made it my mission to try one at every healthy spot we went to (which was a lot – I’m honestly surprised I didn’t turn into a caramel slice). I tried tons of variations of healthier versions- raw, no bake, vegan, gluten free- all of them good and slightly different. (Also note to self: said healthy versions often contain coconut oil which melts at room temperature so buying one thinking you’ll save it for later is a sure fire way to turn your purse into a caramel slice…)
I got home and was determined to try and replicate what I tasted there:
A dreamy shortbready crust
a caramel gooey delicious center
and yummy and decadent dark chocolate top
So I got to work!
The only baking required for these bars is for the shortbread layer and it’s minimal.
The “Caramel” tastes gooey and delicious but that comes from maple syrup and almond butter!
Basically what I’m saying is that now we don’t have to fly across the world to eat like we’re in Oz!

- 1 cup coconut flour
- 1/2 cup maple syrup
- 1/2 cup solid coconut oil
- 1 teaspoon vanilla extract 5ml
- 1/2 tsp sea salt
- 1/2 cup almond butter
- 1/3 cup pure maple syrup
- 1 tbsp Date Sugar
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon sea salt.
Combine all of the ingredients in a small saucepan and heat until all of the ingredients are melted and throughly combined. Pour over the crust and let cool in the refrigerator until set.
- 1/2 cup cocoa powder
- 1/2 cup coconut oil
- 3 tbsp maple syrup (adjust to your taste preference)
- 1/2 tsp vanilla extract
- Pinch of sea salt
