For the last two weeks I’ve had a major, serious, very real craving for waffles.
The only problem? I didn’t own a waffle iron.
When we were registering for our wedding, we decided we would be satisfied with pancakes and that we didn’t need another gadget taking up space in our cabinets.
What a mistake that was.
Because when waffle craving strikes you, no pancake in the world will substitute the peaks and valleys and crispy edges paired with the soft fluffy-ness you get from all of that waffle goodness.
So last week I mentioned to my husband that I wanted to get a waffle iron and well, that man took it to a whole other level. He bought two of the same waffle irons and decided we should have a waffle off with each of us making 5 different kinds of waffles. Mine were all healthy, paleo, gluten- free, dairy free etc. and his, all full of sugar and gluten and all the things he loves.
So yesterday we went head-to-head and I made 5 amazing waffles. It was exhausting, but it was downright delicious and now I can share these waffles with you!
First up are these Chocolate Chip “Peanut Butter” Banana Bread Waffles. Because, one of my favorite things to make (and eat) is banana bread and so a banana bread waffle? Do I even need to explain the reasoning behind this choice?!
This waffle is entirely gluten, grain, dairy, soy and nut/peanut free (you totally can use peanut butter or any other nut butter if you prefer!) And depending on the chocolate chips you use, it can be entirely refined sugar free as well. It tastes like an indulgence but is full of good for you ingredients!
These are amazing served warm but hold up well in the fridge and can easily be reheated. Though I can’t say I’ve gotten that far… I ate up the leftovers straight out of the fridge. No Judgment!
Ps- I’m thinking you could easily make these into pancakes instead of waffles! I haven’t tried it but I’m sure they would be just as delicious!
Here’s What you Need:
1 and a half cups banana (the riper the better!)
1 tbsp Sunflower seed butter (can sub any nut butter)
1 tbsp raw honey
3 tbsp melted coconut oil or ghee
½ tsp vanilla
¼ cup coconut flour
½ tsp cinnamon
¼ tsp salt
¼ tsp baking soda
¼ cup unsweetened shredded coconut
½ cup dark chocolate chips (I used extra dark Enjoy Life)
Extra oil/ghee to grease waffle iron
Add all ingredients except the chocolate chips and shredded coconut to your blender and blend for about 30 seconds. Mix in chocolate chips and coconut ith a spoon.
Place the batter in the fridge for about ten minutes
Heat waffle iron and brush with coconut oil or ghee (do this in between each batch)
Pour about ¾ cup of the batter into the waffle iron
Cook for about 3 minutes (or until the waffle is golden and lifts easily from the iron!)
Top with more sunbutter (or any nut butter), sliced bananas and chocolate chips!
