Dessert for Breakfast + National Coffee Day + Chicago = One Happy Me! (and here’s the cake in a mug recipe from Windy City Live!)

I had SO much fun on Windy City Live this morning!!!

Ice Cream Hack!
Yes, I am eating (coconut milk) ice cream straight out of the pint before noon. Because I’m a grown up.

 

The hosts were fun, the audience was fab & I got to eat gluten free cupcakes at 11:40 a.m. and call it work… so to me, the day was already a gold star sticker kind of day by 11:45.

I had so much fun showing off different dessert hacks but I was so caught up in the cake-in-a-mug fun that I forgot to say how much flour to use! #oops

So here is the full recipe!

Cake in a Mug:

I made a chocolate chip cookie dough cake in a mug this morning and it’s so easy you probably have everything you need sitting in your pantry right now. Because that is how I do dessert. Instant gratification. Don’t even waste time thanking me, just get to baking. #DessertFirst

In your mug, add 1 egg, 3 tablespoons of brown sugar, 1 tablespoon of butter (I used Kerrygold grass fed butter), 1/3 cup of flour (I used gluten free all purpose flour but you can use regular flour too, of course), and 3-4 tablespoons of mini chocolate chips (I used 4 and I’m pretty sure I don’t need to explain why).

Mix it all up (it will look just like dough!):

and then pop it in the microwave for about a minute and a half  until the top looks set. Note- don’t overcook or it will get hard and fast. Better for it to look a little less set and let it cool then to overcook it! I highly recommend topping it with ice cream to make it even more yummy!

Finished product in less than 2 minutes!

 

*You can 100% modify this recipe to go with your diet/eating style of choice. I used Enjoy Life non-dairy chocolate chips. To make it entirely dairy free, sub out the butter for a tablespoon of coconut oil or ghee! Also, just thinking out loud here but mixing in a bit of peanut butter into this mixture would probably taste amazing!

After my segment on Windy City Live, I felt an urgent need to celebrate National Coffee Day in style. I can’t believe I didn’t celebrate it earlier! It’s so not like me!  I quickly walked over to Kitch Fix which I had been dying to try and as if I couldn’t love a paleo/gluten free restaurant any more this sign was greeting me:

I went in and grabbed this delicious cold brew made with dates and almonds that had the perfect creamy and sweet but not too sweet taste.  And I was immediately sad when it was over.

Oh and while I was there I basically bought the whole store.  Plane snacks anyone?!

Ktich Fix Chicago!

 

This place is RIGHT by where I used to live when I was living in Chi Town and it’s a good thing I moved to Los Angeles because I would be spending every penny I earned at this place. Pretty excited about all of my treats! They have so many great meal, snack and smoothie options that you can grab and go and all of their meals come in two sizes which is great for those who want a heartier meal vs. something a bit smaller.

Also, I have to give a big shout out to one of my besties, Jaclyn, for outfitting me with this adorable apron from Anthropologie that worked perfect for my segment today! It’s the perfect combo of everything me! mint green, polka dots and a bow! Love it! Thanks so much Jaclyn!
